Asparagus Quiche and Asparagus Spears

Quiches are open-faced pastry crusts filled with appetizing and at times spicy custards with meats, cheeses, seafood or vegetables. Spinach Quiches are the most common in North America, but other vegetables such as asparagus also make for a tasty treat. This recipe for asparagus quiche melds swiss cheese with eggs, cream and very little in the way of spices other than some garlic and salt. Feel free to add a touch of your own favorite spices and herbs.

Asparagus Quiche

1 nine-inch refrigerated pie crust
1 cups asparagus -- cut in 1-inch pieces, blanched and drained well
6 to 8 whole asparagus spears -- trimmed and blanched lightly

2 cups Swiss cheese, shredded
2 green onions, chopped
1 tablespoon all-purpose flour
3 eggs
1 cup milk or light cream
teaspoon salt
teaspoon garlic powder

 

Heat oven to 425 degrees. Place unbaked pie crust in oven and bake about 7 minutes or until crust is set. Remove from oven. Reduce heat to 350 degrees.







In medium bowl, toss cut asparagus, cheese, green onions and flour. Spread into pie crust. In same bowl, whisk eggs, milk, salt, pepper and garlic powder until mixed well. Pour over cheese mixture.

Bake in preheated oven 25 minutes. Arrange asparagus spears, spoke fashion, over quiche. Bake 10 minutes more, until knife inserted about 1 inch from edge or near center comes out clean.

Let stand 10 minutes to set. Cut into wedges and serve.
