Blueberry Upside Down Pudding


Puddings are creamy soft thick desserts, similar to custards. They generally contain flour, eggs and milk as thickening agents along with flavoring, enhancers and sweeteners. When you think of pudding, you generally think of the standard blasť faire chocolate, butterscotch or tapioca puddings - but berries also make tastelicous puddings as well, particularly Blueberries.

Ingredients

2 cups of fresh blueberries

3/4 cup sugar

1/4 cup Shortening

1 egg

1 cup Flour

1 1/2 tsp. baking powder

1/8 tsp. salt

1 cup Milk

Pour washed blueberries into a buttered casserole dish (1 1/2 qt. size) and sprinkle with 1/4 cup sugar.

Cream shortening, 1/2 cup sugar, and 1 egg together.

Sift together flour, baking powder, and salt. Add this to creamed mixture alternately with 1/2 cup milk. Pour batter over blueberries. Bake at 375 F. for 45 minutes. Spoon out while hot and serve with cream, whipped cream, ice cream, or milk.

Serves 4 to 6.
