Egg Plant And Corn 


8 ears corn, off the cob
1 egg plant, peeled, diced
1 tomato, sliced
2 tablespoons butter
seasonings to taste


Put all ingredients in a stew
pan. 

Add just enough water 
to cover.

Place cover on stew pan. 
Let cook for about 20 minutes.
Then serve.
