Asparagus Italiano

The most commonly known and popular Italian style cuisine in North America involves marinara or other tomato based sauces. Asparagus allthough not allways associated with Italy is actually quite popular in the homeland of the Cesars. Asparagus lends itself well to preparation with Italian Spices. This recipe can be amended with additional sauce as per your taste.

Asparagus Italiano

2 tablespoons of butter or margarine
6 - 8 extra long asparagus
2 tablespoons of finely chopped shallots
2 tablespoons of finely chopped celery
1 medium Paste tomato.
1 tablespoon of grated Parmesan cheese
1/8 teaspoon of oregano
1/8 teaspoon of thyme
A dash of pepper

Heat oven to 3500F. While oven is heating, melt butter in baking dish .  Remove dish from oven.

Place asparagus spears in bottom of dish. Sprinkle with onion and celery.Arrange tomato slices on top.

Sprinkle with oregano and thyme leaves, pepper and cheese. Bake at 3500F. for 15 to 20 minutes or until heated through.  Makes 4 servings In an average household, only one at mine.
