Everyone has heard of eggplant Parmesan, chicken Parmesan or meatball Parmesan but how about Asparagus Parmesan ? Parmesan Cheese is a dry Italian cheese made from skimmed milk. It is most commonly grated for sprinkling over various pastas, vegetables and meats. When added to Asparagus the Parmesan cheese and asparagus compliment one another in an exquisite manner.
1 tablespoon butter
1/4 cup Olive oil
1 pound fresh trimmed asparagus spears
3/4 teaspoon grated Parmesan cheese
A pinch of oregano
salt and pepper to taste
Melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness.
Drain off excess oil, and sprinkle with Parmesan cheese, salt and pepper.
