Asparagus Stir Fry

Stir Frying is an Asian cooking method in which a meals ingredients are fried rapidly in small quantities of heated oil while being continuously stirred. Stir Frying preserves the flavors of the food as well as their natural color and texture.

Stir Fried Asparagus Ingredients and Process

1 pound asparagus, trimmed
1 teaspoon cornstarch
1 tablespoon cold water
2 tablespoons Olive oil
1/4 cup thinly sliced scallions
1/2 cup chicken broth
1 tablespoon light soy sauce
Assorted Vegetables to your liking such as broccoli, sliced carots, snap peas and so forth.

Cut the asparagus into 1-inch lengths. Combine the cornstarch and water in a small bowl and stir into a smooth paste and Set aside.

Heat the oil in a large heavy skillet or wok When very hot add the asparagus and scallions and stir fry for a minute.

Add chicken broth, bring to a rolling boil, and cook, stirring gently 2-3 minutes.

Make a well in the center of the asparagus and add the cornstarch mixture and the soy sauce.
Cook, stirring, for 30 seconds or more, until sauce is smooth and thickened. Serve immediately
