Blueberry Sorbet

A sorbet is a frozen dessert made from flavored sweetened water combined with fruit juice or purée, sometimes wine, liqueur, and occasionally honey. It differs from Ice Cream in that it is not based on dairy products and also differs from Italian ices and sherbet in that it has a softer texture. Sherbet also at times contains dairy or similar fatty substances. Sorbets are considered a healthier alternative to most other frozen desserts.

8 cups fresh blueberries

3/4 cup sugar

1/4 cup fresh lemon juice

1/2 cup water

In a blender, puree the blueberries.

Transfer them to a medium-sized pot. Add the sugar, lemon juice and water.

Bring to a boil and remove from the heat.

Strain into a bowl and set aside to cool.

Then freeze in an ice-cream maker according to the manufacturer's instructions.

Yield: 6 cups
