Health Benefits of Sea Buckthorn
Sea buckthorns aka sea berries are one of natures wonder foods. In recent years the culinary trend has been towards a healthier diet that contributes to our longevity and quality of life. Many super foods have been revealed, goji berries, acai berry, turmeric, ginger and so on. All have some remarkable beneficial properties.
Using Sea Buckthorn
Eaten as is … well it’s doesn’t taste bad, no to me anyway, but then again I’m one of those nuts who likes to suck on raw lemons. For those of you who prefer your treats to be be a tad less tart there are many ways to sweeten the sea berry pot. Sea berries can also be blended into other recipes, Europeans use sea berry juice as a substitute for Orange Juice and juicing the sea berry works well in multiple recipes.

Buckthorn Berry Jelly
If you’re one who enjoys making preserves such as jam and jelly you will like Buckthorn Jelly. It requires a little more labor than most of the recipes we post, but its well worth it.
- Place 2 Cups of berries that have been rinsed of any exterior residue from the harvest in a pot and cover with water. Not so much water that the berries are floating freely, just enough to cover them with a few popping up over the waters surface.
- Boil for about 10 minutes, till the berries are tender, but have not disintegrated into liquid. After turning off the heat allow it to simmer for about 20 minutes to a half hour at most. It should still be warm and will have taken on a mild syrupy texture.
- Strain it with a sieve or similar tool and add 3 Tbsp. Honey, 2 cups sugar [organic is best] 1/2 pkg. powdered pectin. Bring to roiling boil and stir until sugar is completely dissolved. Boil hard for a minute. The Honey is optional, if you choose not to add the honey add an extra 1/2 cup of sugar. If you use a strong-flavored honey, the honey flavor will predominate. preferably you should use a light honey such as clover honey.
