Carrot Walnut Salad
3 cups fresh carrots, peeled and grated
1/2 cup walnuts, finely chopped
1 cup sultanas
4 oranges, peeled and thinly sliced (remove any seeds)
1 medium onion, finely chopped
1/4tsp paprika or cayenne
3 tbsp organic olive oil
Juice of 1 lemon
Salt and Pepper
Mix all of the ingredients together in a large salad bowl.
Chill for at least 30 minutes before serving. It's that Simple!
