Ground Cherry Salsa Art

Salsa translates to 'sauce'. It originated amongst the native Americans of the southwestern USA and Mexico. Traditional salsa contains tomato, peppers, onion, garlic and assorted spices. Spicier and hotter versions contain a higher ratio of hot peppers such as Tabasco, jalapeno and chilies. Ground cherries, being in the tomato family, make an excellent deviation from the standard salsa we find on supermarkets and bodega shelves.

2 cups of ripe halved ground cherries

1 cup of ripe diced tomatoes

1/2 cup minced red onion

1/4 cup finely dice chili peppers- seeds removed

1/4 cup chopped cilantro

1 clove minced garlic

1/2 tsp salt

4 tsp lemon juice

pinch red pepper flakes

pinch ground black pepper

In a colander layer diced tomatoes, ground cherries, garlic and red onion. Sprinkle cilantro over the top. Drain off excess juice from the mix and discard it. Process briefly in a blender / food processor.

Transfer this mix into a suitably large bowl and add dry spices salt, red and black pepper then add the lemon juice. Toss it thoroughly to meld all the flavors.
