Rhubarb Orange Marmalade


6 cups chopped Rhubarb 6 cups Sugar

2 Oranges


Grind the oranges, peels and all.

Combine with rhubarb and sugar in a saucepan; and bring to a full rolling boil.

Reduce the heat and simmer, uncovered for about an hour.

No pectin is needed but some people prefer to add modest amounts which doesn't hurt

Pour into hot jars; process 10 minutes in hot water bath.

Rhubarb Lemon Marmalade


4 lb rhubarb

Rinds of 4 lemons

2 oz walnuts

1/2 pint water

5 lbs. sugar


Quantities can be reduced proportionately.

Wash and trim the rhubarb, Cut into approximately 1" lengths. Put into a preserving pan with the water, grated lemon rind and chopped walnuts. Bring to the boil and simmer for about 10 minutes, until the rhubarb is soft.

Add the sugar and stir until it is completely dissolved.

Bring to a full rolling boil - boil rapidly for about 30 minutes. Pour into hot, clean, sterilized jars and seal & Label at once.
