Halloween Meringue Cookies

1 tablespoon juice from fresh lemon.

1/2 teaspoon vanilla extract.

Food coloring - Assorted Colors

3 egg whites.

1 cup sugar.

1/2 teaspoon Almond ExtractAlmond Extract

Pumpkin Meringue Cookies


In a small bowl blend sugar, lemon juice, vanilla & almond extract, and food coloring. I usually use Orange for Halloween - but you can use whatever you'd like.

In a small mixing bowl beat egg whites add 1 - 2 tablespoons sugar mix at a time, Until mixture holds stiff peaks.

Reserve some of the mixture for color variations.

Drop by teaspoon on cookie sheet lined with parchment paper.

Bake with slightly open oven door in 150 degrees F for approximately one hour.
