Pasta and Pumpkin

 



This is a recipe for the basic Pasta and Pumpkin. A tasty meal which is highly adaptable to meat and meatless dishes.

1 cup grated fresh pumpkin (raw)

1 package thin spaghetti noodles

3 tbls (Butter will suffice but Olive oil is preferable)

A dash of salt

2 cloves garlic

1/4 cup chopped parsley

Prepare noodles as per package directions.

Crush garlic to a fine pulp. Saute in olive oil or butter and salt until soft.

Add pumpkin and saute 2 - 3 minutes. Toss with pasta and serve.
